Vegan chili is wonderful, especially for cold weather. A large pot is perfect for making enough for leftovers. Start by heating two tablespoons of olive oil. Add one cup of chopped onions and two tablespoons of chopped garlic. Cook the garlic and onions until they are brown. Add two cups of corn kernels, one cup of chopped orange or red peppers, one chopped zucchini and four chopped tomatoes.

Stir the vegetables and then add two cups of cooked black beans and one cup of cooked kidney beans. Add one tablespoon of chili powder and one cup of vegetarian stock to the mixture. Cook the ingredients for 20 to 30 minutes. Finish it with salt and pepper to your taste. The vegan chili can be served by itself or I like it over brown rice. A simple green salad will nicely round it out.
